This fat can be use as a concentrate when preparing broth
- 4 1/2 lbs beef fat
- 2+ lbs pork fat
- Onions
- Leeks
- Carrots
- Turnips
- Mix of herbs (Parsley, thyme, Bay leaves, etc)
- Salt
- Horseradish
- A large, cast iron pot or slow cooker
- Cheesecloth or paper cone filter
- Earhenware pot
Simmer all the ingredients for several hours until it liquefies. Filter though the cheesecloth or paper cone into the pot. It can be stored for several years in a dark, cool and dry place.
